Garbanzo Snowman Salad

It’s that time of year, folks! Time to get your entertaining on, or just make an everyday meal feel a little special. This one is both fun and interactive: you can create the snowman on a cutting board and then slide it into a bowl, dressing it in front of your guests for extra showmanship. This recipe is infinitely riff-able, so top with any dressing you have (green goddess would be good here), and other toppings (castelvetrano olives, pickled asparagus, pistachios, feta cheese, etc.) to your liking. 

Yields: 4 servings

WHAT YOU NEED:

• 1 jar (19 oz) Organic Garbanzo Impulse Beans, drained
• 2 large cups of arugula, washed and dried
• ⅓ c oil-packed tomatoes, chopped
• ¼ c kalamata olives, sliced in half
• 1 small shallot, minced
• 1 tsp garlic, minced
• 2 Tbsp freshly squeezed lemon juice
• 2 Tbsp flat-leaf parsley, chopped
• 3-4 Tbsp olive oil
• ½ tsp maple syrup or honey, to taste
• Salt and pepper, to taste

WHAT YOU DO:

  1. Make the snowman:
    Pour a cup of garbanzo beans onto the cutting board at a time and wrangle them into a circular shape. Repeat until you’ve used all of the beans and made your basic snowman shape (big circle on the bottom, middle-sized circle in the middle, and small circle on the top). Make a scarf shape out of the ⅓ c oil-packed tomatoes. Use the ¼ c kalamata olives to make a hat and buttons (and eyes if you like, although mine looked really creepy when I did that). Pack the 2 c of arugula around the edges.
  2. Make the dressing:
    Combine the minced shallot, minced garlic, 2 Tbsp lemon juice, dash of maple syrup, and salt and pepper in a small bowl and whisk until well mixed. Slowly whisk in the 4 Tbsp olive oil. Then add the 2 Tbsp chopped parsley.
  3. Be the entertainer:
    Get out a large salad bowl. Using a dough scraper, scrape the snowman into the bowl, letting it go slowly for maximum melting effect. Pour the dressing on top, and toss well. Voila!
