Impulse Beans on Toast, Umami Version

Beans on toast is one of the ultimate snacks. It’s both healthy and filling, and it’s a great way to get a little extra fiber and protein into your day. We’ve done a few versions that tend to be brighter, and now we have a deeply satisfying version full of umami goodness.

Yields: 2 for lunch, 4 for a snack

Impulse Beans on Toast, Umami Version

WHAT YOU NEED:

• 1 jar (19 oz) Organic White Impulse Beans, including the liquid
• 2 Tbsp olive oil
• 1 small onion, diced
• 1 clove of garlic, minced
• 1 Tbsp white miso paste
• ½ Tbsp soy sauce
• ½ lemon, juiced
• Toast

WHAT YOU DO:

  1. Make the beans:
    In a small saucepot over medium heat, add 2 Tbsp olive oil and heat until it shimmers. Add 1 small, diced onion and 1 minced clove of garlic and stir. Once cooked through but not browned, add in 1 Tbsp of white miso paste and cook for 1-2 minutes, until combined with the onion and garlic. Then add in the 1 jar of white beans, adding another ½ cup of water to the jar after emptying it to make sure to get all of the yummy bean broth. Add this water to the saucepot. Then add the ½ Tbsp soy sauce and stir to combine. Simmer over low heat for about 10 minutes or until combined and the broth has thickened.
  2. Plate it up:
    One broth has thickened, squeeze juice from half a lemon into the beans and stir to combine. To serve, spoon over thick slices of pan-fried toast and top with chive, green onions, or any other herb you enjoy.
